Lemon Poppy Seed Cake

This cake is by far my most requested cake. This recipe was given to me by a sweet friend in college. I prefer to use fresh lemons. But if you don’t want to mess with those, you can use ReaLemon. This cake is perfect for Spring & Summer. It’s so moist, so yummy, and SO easy to make! Enjoy!

Cake Ingredients:

  • 1 Box Lemon Cake Mix
  • 1 Small Box Instant Lemon Pudding
  • ¼ cup Poppy Seeds
  • ½ cup Oil
  • 1 cup Water
  • 4 Eggs

Mix all ingredients together and pour into a greased and floured Bundt cake pan. Bake at 350° for 45-50 minutes, or until toothpick comes out clean.


  • ½ cup Butter or Margarine, softened
  • 2-3 cups Powdered Sugar
  • 2-3 Fresh Squeezed Lemons
  • ½ tsp. lemon peel (optional)

In a mixer, mix butter and powdered sugar until well blended. Gradually stir in lemon juice by the tablespoon, until you reach desired consistency. Stir in lemon peel, if desired.
